Mediterranean Chopped Salad

  • Three heads romaine lettuce, chopped
  • 1 medium red onion, diced
  • ½ cup pitted kalamata olives, halved
  • 1 14oz (BPA-free) can garbanzo beans, drained and rinsed
  • 1 large cucumber, chopped
  • 2 large bell peppers, chopped
  • 1 cup grape tomatoes, halved
  • ½ cup pitted dates, chopped
  • Dried thyme and oregano to taste
  • Your favorite balsamic or tahini salad dressing.  (I made an easy one from ¼ cup tahini, 1/3 cup water, ¼ teaspoon each of salt and pepper, 3 tablespoons fresh lemon juice, whisked together.
  1. Divide romaine lettuce among 4 bowls.
  2. Combine onion, olives, beans, peppers, tomatoes, dates and spices.  Place on top of romaine, preserving any leftovers for another meal.
  3. Dress salads as desired, and enjoy!
