It was time to balance out my bread-themed winter with a green smoothie for spring… Unlike most other smoothies, this one is actually quite low in sugar, but a few strawberries, ginger, and lemon provide a great, refreshing taste. Frozen strawberries are used here instead of fresh to eliminate the need for ice cubes, which water down the drink. (Plus, frozen berries are more readily available this time of year and are easy to usually have on hand…) I love smoothies during the warmer months and tend to make 2-3 servings at a time, storing them in empty tomato sauce jars in the fridge or freezer, until I’m ready to drink. Enjoy!
- 1 cup frozen strawberries
- ¼ cup flax meal
- 2 cups packed baby spinach
- 1 ½ cups packed kale
- 2 inches peeled fresh ginger, roughly chopped
- Juice of one lemon
- 2-3 cups cold water
Blend all ingredients in a high-speed blender until smooth.
