Roasted Apple-Pear Butter

As the weather gets colder, apples become some of the only appealing fresh produce at my local NYC farmers markets, and cooking with them during the holidays fills my house with all the right smells.  I’ve been frustrated with store-bought apple butters because they all seem to have added sweeteners and are much thinner in consistency than I prefer.  I decided to roast the fruit in this recipe in order to bring out the natural sweetness of the fruit and add a caramel flavor.  The pears add another layer of flavor and a wonderful texture.  This apple butter makes a perfect (and healthy) homemade Christmas gift or can be kept in your fridge for at least a few weeks to top all your favorite baked goods.  (It’s also excellent eaten with a spoon strait out of the jar!)  Enjoy!

  • 8 of a combination of medium apples and pears (I used about 6 apples and 2 pears).  Any type of apple is fine.  I used Mutsu apples and Bosc pears.
  • 2 tablespoons olive oil (or enough to coat apples)
  • Zest of ½ medium orange
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  1. Preheat oven to 400 degrees.
  2. Chop apples and pears into 1 inch cubes (leave skin on).
  3. Combine apples, pears, olive oil, orange zest, salt and cinnamon on sheet pan and mix with hands until evenly coated.
  4. Roast mixture for ~45 minutes to 1 hour, stirring occasionally.  (The fruit may start to mush, which is OK.)
  5. Place cooked fruit in a saucepan and puree with an immersion blender until completely smooth.  (If you don’t have an immersion blender, you may use a blender or food processor to puree, before placing fruit in the saucepan.)
  6. Add vanilla to pureed fruit and cook on low heat for 1 hour, stirring often to prevent burning.  (the cooking time for this step may vary significantly depending on the amount of moisture left in your fruit and your desired consistency.)
  7. When apples have thickened to your desired consistency, place the mixture in glass containers and store in the refrigerator.
